This recipe is from the book "Raw Food - A complete guide for every meal of the day" by Erica Palmcrantz and Irmela Lilja.
I tweaked it a bit to fit our needs, and it came out just great.
This is what you need for the crust:
2 cups raw almonds
1 Tbs coconut oil
5 Dates
2 Tsp cinnamon
Pinch of salt
1 Tbs raw honey or maple syrup
Chop the nuts in food processor. Add the oil, dates, cinnamon and salt and mix. Add honey or syrup, mix. Spread and press the dough on the bottom of a pie dish.
For the filling you need:
2 Apples
1 Banana * 2 Dates
1 Tsp Cinnamon
Thoroughly blend all the ingredients in a food processor, and spread inside the crust.
For the garnish you need:
3 Apples, sliced (I peeled them so my kids were more likely to eat the pie :-)
Cinnamon
Garnish the pie with sliced apples and sprinkle cinnamon on top. I especially like about this recipe that it was easy to make and didn't require any preparation such as soaking nuts etc, what you usually have to do for raw recipes. It came out so yummy and the whole family liked it very much.
Most people think about guacamole when it comes to pureeing avocados.
I use the super healthy fruit on a daily basis for tons of different things, from (ice) creams to puddings or spreads.
And a chocolate dip. Yes, chocolate dip!
It's so unbelievably easy and so yummy. Try it:
For 6 people I used 3 avocados, about 3 Tbsp of cocoa powder and raw honey (maple syrup would work just as well).
And for once I won't give exact measurements (as if I ever do :-) because it's really up to you how chocolaty and/or sweet you like it.
Just blend the avocados, add the cocoa powder and the honey, add more if needed, and voila - you got the richest, healthiest chocolate cream that I can imagine.
Arrange with slices of apples and enjoy!
P.S. I had some leftover and put it in an airtight container overnight. The next day it had hardened somewhat in the fridge and now it had the texture of rich chocolate mousse. Yum! I had the whole rest of it by myself in one setting!
These are super easy-to-make and (for a change) look good as well, at least so I think.
You'll need:
* 1 cup raw almonds coarsely chopped (by hand or in blender)
* 1 cup raw walnuts (coarsely chopped)
* 1 cup maple syrup
* 1 cup raw almond butter
* 1/2 cup shredded coconut flakes
* extra coconut flakes for covering
* raw cocoa or carob powder for covering
Mix all ingredients in a bowl. Put the bowl in the fridge until the mixture is a little hardened (1/2 hour should do it).
Prepare two little containers with the coconut flakes and the cocoa or carob powder.
Form bite-sized balls with your hands and roll them in the coconut flakes and the powder.
With the weather getting hotter I wanted to share two recipes with you. One is for ice creem that especially my 4-year old loves and the other one, quinoa veggie salad, is a great dish to bring to BBQs and potlocks.
Oh, as you know English is not my native language, so please excuse any mistake that I might make/have made, but this is NOT a typo - I decided to call it creem instead of cream since there's no dairy in it. As always my recipes are vegetarian or vegan if you substitute the honey.
For the Ice Creem you'll need:
* 1 ripe avocado
* 1 banana
* 1 cup fresh or frozen strawberries
* honey or other sweetener, depending how sweet you like it
* pop molds (and here we go again with the plastic... I haven't found an alternative for this one yet!)
Put all ingredients in a blender, mix it all up and fill in the molds This amount makes about 4 molds for us. Sometimes we just eat it out of a bowl; oh, and that IS an alternative to the pop molds!
As always you can add anything you want to hide in there or change ingredients as you like.
I always use avocado but switch the fruit depending on what I have at the moment.

For about 8 servings of the Quinoa Veggie Salad you'll need:
1 1/2 cup quinoa (can get at Whole Foods and most supermarkets)
about 3 cups of chopped vegetables that can be eaten raw (garlic, onion, pepper, cabbage, carrots,... - whatever you have)
salt and spices to taste
1 tbs balsamic vinegar
2 tbs olive oil + a little extra to heat up
1 cup raw cashews
In a large pot, heat up a little olive oil and add spices that you like (I love cumin for this dish). Add quinoa and mix with the olive oil mixture.
Add the water and cook quinoa according to directions (usually in double amount of water, until water is absorbed and quinoa soft).
When all water is absorbed, add the chopped vegetables and mix well.
Take off the oven and add the balsamic vinegar, olive oil and salt and/or other spices and herbs and combine.
Can be served warm or cold. Great to bring to potlucks or parties!

And here are some ideas for greener parties and BBQs:
Try to avoid disposables such as silverware, plates and cups - especially if you don't have a huge amount of people
If you feel like you must use disposables, think about buying biodegradable items (you can find them at most supermarkets, even CVS is selling some)
Can you do without plastic? Come up with creative ideas how to avoid plastic wraps (think cloth & rubberband?), ziplock bags (reusable containers?), plastic water bottles (reusable stainless steel or glass) etc. etc. Plastic is everywhere, and gets everywhere. Avoiding is the best strategy to not being exposed to harmful chemicals that might leach into food/drinks, especially when the plastic gets hot in this kind of weather.
My friend Daniela gave me the basic recipe years ago, and it's a staple in our household ever since.
You need (all organic if possible):
* 2 cups rolled oats
* 3/4 cup flour (we use whole spelt)
* 1/2 tsp baking soda or baking powder
* pinch of salt
* 1/2 tsp cinnamon
* 3/4 cup coconut oil
* 3/4 cup maple syrup or other natural sweetener
* 6 tbsp apple sauce
* 1/2 cup raisins and/or nuts and/or sunflower seeds
* whatever else you like in cookies
Mix the oats with the flour and the baking soda or powder, then combine with other ingredients and mix well; place little heaps (with a tablespoon) on baking sheet. Bake at 350 for about 25 minutes (including the preheating time).
You can experiment with tons of other ingredients. After using this recipe for many years I can honestly say that no batch ever tastes like the other.
Try vanilla extract, coconut flakes, cranberries and other dried fruit, any fresh fruit you like,...
