Mario MANIA - again!

Hi everybody - I hope you had wonderful holidays!
We kept it simple and as green as possible with home cooked meals, very few presents, wrapping with re-used gift wrap and/or re-usable fabrics, online holiday cards and so on.
I believe in self-made gifts whenever possible, so our sons got one-of-a-kind crocheted dolls - Mario and Luigi - under the tree. It took me about 15 hours to finish these, and I'm very happy to say that the boys love them.

Recipe Of The Month

Very Healthy (Almost :-) Raw Cupcakes

I made this with various toppings for my son's 5th birthday for his school celebration, family get-together and party and it always was a real big hit. As promised here's the recipe.

This recipe makes a total of about 30+ mini cupcakes - I decided to make them small for little kids. They are also very, very rich.

This is what you need for the bottoms:

* 2 cups raw almonds
* 10 Dates
* 2 Tsp cinnamon
* Pinch of salt
* 1 Tbs raw honey or maple syrup

Chop the nuts in food processor. I suggest if you don't own a high-speed blender you can also use one jar of raw almond butter. Add the dates, cinnamon and salt and mix. Add honey or syrup, mix.
Put a spoonful of the mix each in cupcakes forms.

Topping:

* 16 oz pack of Medjdool dates
* 1 Banana
* 1 Tsp Cinnamon
* 3-4 Tsp cocoa powder

Thoroughly blend all the ingredients in a food processor, and spread over the bottoms.

Garnish:

* chocolate rounds or
* colored sugar or
* fresh fruit
* or whatever you like

Et voila! Enjoy!

***Composting***

You live in a small apartment like us and can't compost in your own back yard but hate to see the good stuff go in the garbage?

I met a wonderful lady who you can bring your compost to.
